Niçoise Salad with Tuna and Egg
Potatoes, green beans, and Mediterranean vegetables with mustard vinaigrette
This Nice-inspired main-course salad combines waxy baby potatoes, crisp green beans, tomatoes, cucumber, olives, tuna, eggs, and anchovies. A tangy Dijon vinaigrette seasons the potatoes while still warm and ties every component together without making the salad heavy.

- 12 g feines Salz für das Kochwasser
- 300 g grüne Bohnen, Enden entfernt
- 4 Eier, Größe M
- 160 g Römersalatblätter, gewaschen, vollständig getrocknet und grob gezupft
- 300 g Kirschtomaten, halbiert
- 200 g Salatgurke, längs halbiert, entkernt und in 1 cm breite Halbmonde geschnitten
- 80 g rote Zwiebel, in sehr dünne Halbringe geschnitten
- 240 g Thunfisch in Olivenöl, Abtropfgewicht, in großen Stücken
- 24 g Sardellenfilets in Öl, etwa 8 Filets, abgetropft
- 50 ml natives Olivenöl extra
- 25 ml Rotweinessig
- 12 g Dijon-Senf
- 5 g Knoblauch, sehr fein gerieben
- 3 g feines Salz
- 1 g schwarzer Pfeffer, frisch gemahlen
- 15 g glatte Petersilie, fein gehackt
Instructions
- For the vinaigrette, vigorously whisk the olive oil, red wine vinegar, Dijon mustard, garlic, 3 g salt, and pepper into a lightly emulsified dressing. Toss the red onion rings with 30 ml of the vinaigrette and leave at room temperature during the remaining preparation, for no longer than 30 minutes.
- Place the potatoes in a wide saucepan, cover with at least 2 cm cold water, and add 12 g salt. Bring to a boil, then cook gently for 15–18 minutes. They are ready when a small knife enters without a hard center while the skins remain intact.
- At the same time, cover the eggs with cold water in a second saucepan, bring to a boil, and cook gently for 9 minutes from the moment the water boils. Transfer immediately to ice water and cool for at least 5 minutes. Peel and quarter lengthwise; discard cracked or unusually smelling eggs.
- Add the green beans to the potatoes for the final 4 minutes. Lift them out with tongs when vivid green and tender with a distinct bite, then immediately chill in ice water for 1 minute. Drain thoroughly and pat dry.
- Drain the potatoes and let them steam dry for 2 minutes. While still warm, halve or quarter depending on size, gently toss with 45 ml vinaigrette, and spread individually on a large plate to cool until lukewarm without continuing to cook.
- In a large bowl, gently toss the romaine, tomatoes, cucumber, and drained marinated onion rings with half of the remaining vinaigrette. Return all vinaigrette from the onion bowl to the remaining dressing.
- Divide the dressed salad among four large plates. Divide the potatoes, green beans, and olives into four equal amounts and arrange neatly so every component remains visible.
- Break the tuna only into large chunks and arrange it on each plate with four egg quarters and two anchovy fillets. Keep the tuna refrigerated until immediately before assembly and remove it with clean utensils.
- Stir the parsley into the remaining vinaigrette and distribute all of it among the four plates. Serve immediately; bread, cheese, and other unlisted sides or sauces are excluded from the nutrition values.
Tips
- Start the potatoes in cold salted water and boil only gently so they cook evenly without splitting their skins.
- Cook the beans for exactly the final 4 minutes and chill immediately so they remain green and crisp.
- Dress the potatoes while warm with the measured vinaigrette because they absorb flavor better than fully cooled potatoes.
- Keep the tuna in large chunks and add it only during plating so it stays juicy and visually distinct.
- Arrange components neatly instead of mixing everything together; this prevents crushing the eggs and tuna and keeps every portion balanced.
Common mistakes
Variations and substitutions
Storage and notes
Storage
