Tender oven-baked peppers in a rich tomato sauce

Four large bell peppers are loosely filled with seasoned minced beef and par-cooked rice, then braised in a rich tomato sauce in the oven. Preparing the rice and sauce in parallel, checking a safe core temperature, and allowing a five-minute rest produce a juicy filling, tender peppers, and neatly portioned servings.

Ingredients

  • 4 große rote und gelbe Paprikaschoten (zusammen ca. 900 g)
  • 120 g Langkornreis, roh
  • 500 g Rinderhackfleisch, höchstens 20 % Fett
  • 150 g gelbe Zwiebel, fein gewürfelt und geteilt
  • 12 g Knoblauch, fein gehackt und geteilt
  • 1 Ei (Größe M)
  • 30 g Tomatenmark, geteilt
  • 700 g passierte Tomaten
  • 200 ml natriumarme Rinderbrühe
  • 20 ml Rapsöl, geteilt
  • 15 g glatte Petersilie, fein gehackt und geteilt
  • 2 g Paprikapulver edelsüß
  • 1 g getrockneter Majoran
  • 8 g feines Salz, geteilt
  • 1 g schwarzer Pfeffer, frisch gemahlen und geteilt

Instructions

  1. Wash and dry the bell peppers. Cut a lid about 2 cm high from each pepper and reserve it. Remove all seeds and white membranes without piercing the walls. Prepare the onion and garlic as specified, chop the parsley, and measure all ingredients. Preheat the oven to 190°C conventional or 170°C fan.
  2. Rinse the rice in a sieve under cold water until the water runs mostly clear. Add it to plenty of boiling water and par-cook for 7 minutes; the grains should be flexible outside but distinctly firm at the center. Drain, briefly rinse under cold water at once, drain very thoroughly, and spread out flat.
  3. While the rice cooks, heat 10 ml rapeseed oil in a saucepan over medium heat. Cook half the onion for 3 minutes until translucent. Add half the garlic and 15 g tomato paste and stir for 1 minute. Stir in the passata, beef stock, 2 g salt, and 0.5 g pepper, bring to a boil, and simmer gently uncovered for 5 minutes.
  4. Combine the barely warm, well-drained rice with the minced beef, remaining raw onion, remaining garlic, egg, remaining 15 g tomato paste, 10 g parsley, sweet paprika, marjoram, remaining 6 g salt, and remaining 0.5 g pepper in a large bowl only until evenly distributed. Do not knead firmly and never taste the raw filling.
  5. Lightly coat an approximately 24 × 30 cm baking dish at least 6 cm deep with the remaining 10 ml rapeseed oil. Pour in the tomato sauce. Loosely and evenly divide the beef-rice mixture among the four peppers, leaving about 1 cm free at the top so the rice can expand. Stand the peppers upright in the sauce and set the lids loosely on top.
  6. Cover the dish loosely with baking parchment and then aluminum foil; the foil should not touch the food. Braise on the middle shelf for 40 minutes. When removing the covering, allow hot steam to escape away from your body.
  7. Carefully remove the covering and pepper lids. Bake the peppers uncovered for another 15 minutes, until the sauce bubbles vigorously, the peppers are tender, and light roasted spots have formed. Insert a clean thermometer from the side into the center of the thickest filling: it must reach at least 71°C and show no pink areas. If necessary, continue cooking in 5-minute increments and check again.
  8. Remove the dish from the oven and rest the peppers uncovered for exactly 5 minutes. Scatter over the remaining 5 g parsley. Serve one stuffed pepper with one quarter of the tomato sauce per portion; unlisted side dishes are included in neither the serving nor the nutrition values.

Tips

  • Par-cook the rice for only seven minutes and rinse it cold afterward; fully cooked rice would become soft and compact during braising.
  • Mix the filling lightly and leave room at the top. Firmly kneaded beef and overfilled peppers create a dense filling or cause rice to spill out.
  • Choose peppers of similar size so all four become tender at the same time and the filling cooks safely.
  • Measure the core temperature from the side in the thickest filling without touching only the hot tomato sauce or the base of the dish.
  • The five-minute rest stabilizes the filling and sauce; portion only afterward.

Common mistakes

  • Reis vollständig weich kochen → nur 7 Minuten vorkochen, kalt abspülen und gründlich abtropfen lassen.
  • Heißen, nassen Reis mit Hack mischen → flach ausbreiten, nur noch lauwarm werden lassen und überschüssiges Wasser entfernen.
  • Hackmasse lange kneten oder in die Schoten pressen → nur gleichmäßig mischen und locker einfüllen.
  • Paprika bis zum Rand füllen → etwa 1 cm Platz für den sich ausdehnenden Reis lassen.
  • Form ohne Abdeckung beginnen → zunächst 40 Minuten abgedeckt schmoren, damit Füllung und Schoten gleichmäßig garen.
  • Nur die weiche Paprika beurteilen → in der dicksten Füllung mindestens 71 °C und keine rosa Stellen sicherstellen.
  • Sofort nach dem Ofen anschneiden → 5 Minuten ruhen lassen, damit Saft und Füllung sich setzen.

Variations and substitutions

  • Rinderhack: durch 500 g Putenhack ersetzen; wegen Geflügel mindestens 74 °C Kerntemperatur erreichen. Geschmack und Nährwerte ändern sich.
  • Langkornreis: durch dieselbe Rohmenge Basmatireis ersetzen und ebenfalls nur 7 Minuten vorkochen. Naturreis ist ohne separate Anpassung ungeeignet, da seine Garzeit deutlich länger ist.
  • Rinderbrühe: durch dieselbe Menge natriumarme Gemüsebrühe ersetzen; beide Produkte auf Sellerie, Gluten und weitere Allergene prüfen.
  • Ei-frei: Ei weglassen und 20 g zusätzliches Tomatenmark in die Füllung geben. Die Füllung bleibt etwas lockerer; Ei entfällt als Allergen.
  • Rote und gelbe Paprika können durch vier gleich große orange Paprika ersetzt werden. Grüne Paprika schmecken herber und benötigen je nach Wandstärke etwas länger.

Storage

Rohes Hackfleisch bis zur Verarbeitung bei höchstens 5 °C lagern, getrennte Utensilien verwenden und Hände sowie Arbeitsflächen sofort reinigen. Gegarte Paprika höchstens 2 Stunden bei Raumtemperatur stehen lassen, anschließend in flachen Behältern zügig abkühlen und luftdicht bis zu 3 Tage bei höchstens 5 °C lagern. Nur einmal vollständig auf mindestens 74 °C erhitzen, im abgedeckten Ofen bei 170 °C typischerweise 20–25 Minuten. Einzelportionen nach vollständigem Abkühlen bis zu 3 Monate einfrieren, über Nacht im Kühlschrank auftauen und danach vollständig durcherhitzen. Bereits aufgewärmte Reste nicht erneut kühlen.
